Pistachio
Pistachio is a small tree that originated in the Middle East and Central Asia and grows in countries such as Iran, Syria, Turkmenistan and western Afghanistan. This tree produces fruit that is edible and very tasty. Pistachio is a Persian word that has entered European languages through Latin.
Pistachio production in Iran in 2017 was 574,987 tons, which has made this country the first in the world. After Iran, the United States came in second with 272,291 tons and China came in third with 95,294 tons.
Pistachios in Iran
The amount of pistachio production in Iran is about 575 thousand tons per year and only 10% of this product is consumed domestically and the other 90% is exported. Bardaskan city, Mahvalat city, Khalilabad city, Damghan city, Rafsanjan city, Zarand city, Sirjan city, Anar city, Buin Zahra city, Abarkooh city are the main centers of pistachio production in Iran and 80% of pistachios produced in Iran, of this Areas are available.
Pistachio tree
Pistachio is a plant that has been cultivated in different parts of Iran for a long time and there are wild pistachio forests in the northeastern region of Iran, especially on the border of Afghanistan and Turkmenistan. It is thought that the pistachio tree was domesticated and cultivated in Iran about 3-4 thousand years ago. Pistachio tree has a very long life and can live up to 300 years. Planted pistachio trees, from about the seventh to the tenth year after planting, reach a significant yield and in the twentieth year reach the highest yield.
It is a deciduous tree that can grow up to 10 meters and produce an average of 50 kg in a two-year period. Pistachio is a desert and hardy plant and can tolerate soils with high salinity and temperatures between -10 degrees in winter and +48 degrees Celsius in summer. This tree needs hot and dry summers and well-drained soil to produce and does not grow well in wet or cold areas.
Who Produces The Most Pistachios In The World?
Currently, the United States is the leading producer of pistachios accounting for 49% of the global share, according to the reports by INC (International Nuts & Dried fruits Council) based on a 5-year average. Iran and Turkey followed by 26% and 19% each.
The 5-year average exports for in-shell pistachios show that the United States leads the world with 46% in total. Iran is the second top exporter (accounting for 29% of the global export share) for the same period.
The main destinations for Iranian pistachios are China, European countries, and the Middle East. American pistachios are mostly destined to China and European countries.
General Types of Pistachios
In-shell: A pistachio nut with a hard shell is called an in-shell pistachio.
Shelled (or kernel) : A pistachio nut whose shell has been removed is called shelled pistachio or pistachio kernel
In-shell Pistachios : In-shell pistachios are either open-mouth or closed-mouth
Open-mouth pistachios are naturally open (NO) and they are commonly known as the smiling nuts because the split resembles a big smile.
Closed-mouth pistachios could turn into open-mouth by mechanically opening (MO) its shell.

Akbari pistachio
Akbari pistachio is one of the commercial cultivars of Iranian pistachio which has more economic value compared to other cultivars. This figure was identified and propagated in the late thirties by Haj Akbar Basenjideh, in the village of Abbasabad Amin, in the Kashkuyeh section of Rafsanjan city. The cultivar has almond-shaped, elongated and large fruits.
